Apple Sponge Tart RecipeA layer of caramelised apples with a covering of lightly spiced sponge soaked in syrup. Serves 8-10, best served with cream or vanilla ice cream.
100g Butter or margarine, softened200g plain flour (sifted)tbsp. cornflourtbsp. caster sugar
Pinch of sea salt2 tbsp cold water or milk
8 dessert apples140g golden caster sugar (plain caster sugar's fine if you don't have any)
1 measure of apple brandy or 1 tsp. brandy flavouring (optional)100g butter or margarine
100g caster sugar100g self raising flour (or plain flour and 3/4 tsp. of baking powder)1/2 tsp. cinnamon1/2 tsp. ginger
If you prefer, you can use your own shortcrust pastry recipe, or skip steps 1-6 and just use ready-to-roll.
Grease a 25cm flan tin with a removable base (putting a circle of greaseproof paper on the base also makes it easier to remove the tart later).
