For those who don't know; banana fritters are bananas which are fried in a deep batter. They're more of a summer thing, but I had the urge to use the old deep fat fryer for something (plus the recipe called for coconut milk, which I never seem to use).

The bananas are the large pile at the back, the pears are the small one on the front right and the apples are the small pile on the front at the left (I was running out of batter, so the apples aren't as well coated).

I got it from a book, but off the top of my head, it's;

1. Seperate an egg.
2. Sift 70g flour, 1 tablespoon of cornflour (or two of rice flour) and 1 tablespoon of sugar.
3. Beat in the egg's yolk and 150ml of coconut milk.
4. Whisk the egg white until it forms soft peaks and fold it into the rest of the mixture.

I managed to use that to coat 5 1/2 bananas, a small chopped pear and a small chopped apple.
