Photographed with a slice removed to hide the damaged crust show off the inside.
I was going to just do caramelised apples for the filling, but they didn't fill as much space as I expected. I didn't have any cream for custard (and I'm not a fan of custard tarts anyway), so I went with a sponge as filler.
The filling is caramelised apples with a teaspoon of brandy flavouring (apple brandy would be too rich for my blood ).
The sponge is just a basic Victoria sponge with a little bit of ginger and cinnamon. I also drizzled it with the left over syrup from the apples and sprinkled on some sugar, like a lemon drizzle cake.
This was also my first time using a tart tin I got for Christmas. I need more practise to get the edges neater.
